I saw a few recipes for pizza using a wheat tortilla in place of pizza dough. So, I decided to come up with my own pizza-type concoction. However, I decided to go Stromboli-style and basically made a pizza quesadilla.
I ran into trouble though because I discovered my shredded mozzarella cheese had started to go bad. I used parmesan cheese instead, which got some cheese in there, but it didn’t really provide as much cheese as I would have liked. This made it a little sloppy while eating because the shredded mozzarella would have held the other ingredients together better. The parmesan simply isn’t thick enough to do that.
Ingredients: Two wheat tortillas, 1 small zucchini sliced, mushroom slices (I used leftover baby portabellas), tomato sauce and shredded mozzarella cheese (ideally)
Directions: Slice and wash vegetables. Place one tortilla on a baking tray, and cover with a layer of sauce. Place veggies on tortilla and cover with cheese. The amount of cheese is left at your discretion. I would say 2/3 would probably work for a medium sized tortilla. Place second tortilla on top and cook in oven at 350 for about 10 minutes.
It was tasty, had the pizza effect, but was so just so messy. Again, I think the use of mozzarella cheese instead of parmesan cheese would help that.
