An Easy Summer Quiche

How can cheese, eggs, milk and veggies combined in a pie crust be bad?

It really can’t. Exhibit A — Last night’s dinner.

My Mom makes a great quiche with ham, green peppers and some other stuff I can’t really remember right now. But I’ve never made quiche at all. That all changed last night.

Ingredients: 3 eggs beaten, 1/2 cup milk  (I used skim), 1 cup cheese of your choosing (I picked a 4-cheese mix from Kraft), 1/2 cup chopped zucchini, 1/2 cup chopped portabella mushroom, 9 inch pie crust.

Directions: Preheat the oven to 375 degrees. Mix together all of the ingredients and pour into a pie shell. Cook for about 35 minutes.

How do I even describe the amazing deliciousness of quiche? I ate three slices after swimming laps.  Is anyone else completely starving after they swim laps or is it just me?

OK, now on to all the work piling up on my desk. I have a daily story to write, plus work to do on a profile of a congressional race and mounds of public records to sift through. Gonna be a busy day!
