Banana Nut Bread, Tea and a Novel

I realize I’m supposed to be resting, getting better and all that. But it’s really boring just sitting in my living room. I can only lounge about watching movies for so long.  🙂

So, I decided that baking had to happen — an easy activity that wasn’t going to cause dehydration. And I just happened to have two bananas that had browned while I was away covering the governor’s race.

Commence banana mashing.

Well, actually first I found a recipe for banana nut bread because I didn’t really know how to make it other than having a vague idea that it involved bananas, sugar, flour, etc.

Ingredients: 1/2 cup melted butter, 1 cup sugar, 2 eggs, 3 extra ripe bananas, mashed (I only had two), 1 1/2 cups flour, 1 tsp baking soda, 2 tsp baking powder, 4 tbsp milk, 1/2 tsp salt (didn’t actually include salt) and 3/4 cup chopped walnuts (I did 1/2 cup)

Directions: Preheat oven to 350 degrees and spray bread pan. In mixing bowl, combine ingredients in given order and blend well before adding the next ingredient. Pour batter into the bread pan and bake for about 45 minutes. Remove pan from oven and let sit for a few minutes (I probably let mine sit for about 10 minutes) before transferring bread from pan to a cooling rack.

Add big mug of tea and a novel. (See the pretty flower in my tea?)

I was quite happy with my first stab at banana bread. It was very moist and came out pretty light. I feel like a lot of these breads can come out quite dense. And the recipe is really a snap. You literally mix everything together and put it in the oven.
