The Ultimate Comfort Foods

OK, first let me say, it’s been a rough week.

I had a nasty bout of heat exhaustion when I was out on the campaign trail that sort of screwed me up for the whole week.  I’ve been sleeping so much. Anyway, that resulted in very little cooking. My version of cooking became spaghetti.

So, last night, I decided I just wanted some good old fashioned comfort food. What’s better than meatloaf and mashed potatoes?

OK, here’s the thing. I am terrible at making meatloaf. I don’t know why,  but it just eludes me. It usually turns out too dry. In my defense, I am improving in my meatloaf making skills. But it doesn’t taste like my mom’s quite yet, even though I’m using her recipe that’s out of a book my great aunts put together. (My mom gave me her copy because the aunts gave her a new one, hence her name on the cover)

Ingredients; 2 pounds ground meat (I used one), 1 small onion chopped, 1 cup oats, 8 oz ketchup, 1 tsp salt, 1/2 cup water

Directions: Mix and mold ground meat, onion, oats, water, salt and 4 oz of ketchup into a loaf. Pour remaining ketchup on top. Bake at 350 for one hour.

Meatloaf + mashed potatoes + veggies = dinner. (I forgot to take a picture of it though.)
