Dinner With The Fam

My grandpa and sister are visiting!

They drove all the way from Pittsburgh to Tallahassee for the 90+ degree weather and summer rain storms. But we did make it to Wakulla Springs to show my grandpa some gators!

See the gator? It’s that long dark spot up on the ground in front of the boat.

We had bbq for lunch, but my grandpa isn’t a big eater. So, I threw together a light dinner for us. Guess what we had?

And then it was this…

Ingredients: French bread, can of Italian diced tomatoes, olive oil, fresh basil,  seasoned bread crumbs, mozzarella cheese, assorted fruit

Directions: Heat oven to 350 degrees. Lightly brush bread with olive oil and heat in oven for about five minutes. Meanwhile, mix diced tomatoes, 1 tbsp olive oil, diced fresh basil, and 1/3 cup bread crumbs.  Remove bread from oven and spoon tomato mix over bread and return to oven for about another five minutes.

Serve with slices of mozzarella cheese, strawberries and watermelon. OK, whatever fruit you want, I just chose those. 🙂
