Some Veggie Experimentation

My grandpa and sister are on their way back to Pennsylvania, and our last dinner was pretty uneventful and light. But it was fairly tasty, I have to say.

Menu: Big salad with red pepper slices and tomatoes, French bread topped with mozzarella cheese and tomato sprinkled with basil, kale chips and cantaloupe. (The beer on the end was for my grandfather… Sarah and I just had water)

I hadn’t actually made kale chips before, and to be honest, I can’t decide whether I like them or not. My sister said they kind of reminded her of fried vegetables that you would get at a fair. And even though I wasn’t sure if I liked them, they were oddly addictive.

Ingredients: A bunch of kale, 1 tbsp olive oil, salt and pepper to taste

Directions: Bake at 300 degrees for 20 minutes.

OK, time to get to work! Happy Tuesday!
