Pool — Check

Book (Don’t judge, it’s the 4th Harry Potter)  — Check

Locally produced wine — check

Summery dinner — check

I fell slightly off the wagon in my “back on track” menu for the week. Tropical Smoothie was calling my name around lunch time, so I got a chicken pesto sandwich, which was actually what I had planned to make tonight. Instead, I had the baked sweet potato with some butter and cinnamon, corn and cantaloupe for dinner.

In my ongoing “quest” to become a better cook, I’ve become addicted to reading other food blogs and quite a few that log daily eating habits mention sweet potatoes. So, I started baking them on nights that I didn’t really have time to cook.  I feel like I learned a cooking lesson, even though it’s not really a challenge to make a baked sweet potato. 🙂
