I came home from work yesterday to this…
My Mom made me fettuccine! I’m pretty sure she should just permanently stay and cook for me, but she and my Dad are hitting the road in a few minutes to head back to Pennsylvania. 😦
Here’s her recipe:
Ingredients: 8 tbsp whipped butter, 1/2 cup regular cream, 1/2 cup freshly grated parmesan, 1 clove garlic, chopped very fine, 2 tbsp parsley, chopped fine, 1 lb fettuccine
Directions: Cream the softened butter until light and fluffy by beating it vigorously against the sides of a bowl with a wooden spoon. Beat in the cream a little at a time. Then beat in the cheese a tbsp at a time. add the garlic and parsley. Cover and set aside. Heat serving platter. Cook fettuccine 8 minutes, stir with wooden forks. Drain and lift with forks to thoroughly drain. Transfer to platter. Add the butter/cheese mixture and toss ’til all strands are coated well. Season with pepper.
