Sunday Egg Salad

I realize it was the weekend and I should have been a little more adventurous in the kitchen since I had some free time. Instead, I went the easy route last night and tried my hand at egg salad from Skinny Taste.

Ingredients: (For one serving)  2-3 hard boiled eggs, 2-3 tsp light mayonaise, 2 tbsp green scallions or chives

Directions: Hard boil eggs, peel eggs, mash eggs and mix with mayo and scallions/chives

Notes: I have problems hard boiling eggs. I have no idea why, but I tend to overcook or under cook them or I can’t peel them neatly.

Serve with fruit for a light summer lunch or dinner.
