Quinoa take two

Last summer, I tried quinoa for the first time.

It didn’t take.

I wanted to like it, but I just wasn’t a fan. A few friends suggested I should try a different recipe. It took me more than a year to try it again.

This time, I picked up a quinoa-rice blend  to eat with some tilapia and zucchini.

The second time was so much better.

The blend had a cilantro flavoring, which also made a difference I think. The last time I made it, there was no flavoring. It was just a grain mixed in with peaches. The flavored blend was much tastier.

When the quinoa was close to being finished, I threw in some zucchini slices.

And then paired it with some tilapia (cooked it in butter, salt and pepper.)

Yes, it was messy, but quite tasty.
