My first Pinterest recipe: Mushroom-gruyere grilled cheese

I saw a photo on Pinterest that cracked me up.  It’s of someone trying to emulate cookie monster cupcakes  that another person had posted.

Read the post . It will crack you up, especially if you loved Cookie Monster as a kid. (Personally, he was my favorite Sesame Street character) And this frequently tends to be how I view my cooking/baking. It never looks pretty. 🙂

But it was my turn to try to make mushroom-gruyere grilled cheese that I saw on Pinterest. Look at it: Doesn’t it make you want to drool?  And who doesn’t love grilled cheese?

Here was my version:

OK, not as drool worthy to look at it, but it was tasty!

I didn’t follow the directions quite as Closet Cooking recommended. I thought I had onion in my refrigerator, but I did not. I also forgot to pick up thyme.

Here’s what I did:

Ingredients: Four pieces of bread, 8 oz of baby bellas, 1 cup shredded gruyere, 1/4 cup white wine, 1 tbsp butter, 1 tbsp olive oil, pepper, salt, 2 cloves garlic, chopped, additional butter or spread to put on bread

Directions: Melt butter and heat olive oil in pan.  Saute garlic, then add mushrooms and cook for about 10 minutes, or until they start to caramelize. Add the wine and deglaze the pan, cooking until most of the liquid has evaporated. Transfer to bowl and sprinkle with salt and pepper. Then add in cheese and mix together.

Take one slice of bread and butter, placing the buttered side down in the frying pan. Transfer half the cheese-mushroom mixture to the bread. Butter second slice and place on top with butter side up. Cook on medium, checking to make sure the bottom side doesn’t burn.  Flip and cook on the other side.  Repeat with the other two slices of bread.

Serve With: Applesauce

Reviews: The boyfriend gave it a thumbs up, but we both agreed it could have used some more cheese.  If I’d followed it exactly as the recipe was written, I’m sure it would be extra delicious.
