Let me first just say that if it weren’t for that whole matter of protein, I’m fairly sure I could exist on watermelon, peaches and strawberries.
Fruit is one of my favorite things about summer. I buy watermelon pretty much every week.
And since I didn’t feel like spending a lot of time in the kitchen Monday night, it became part of the dinner.
Roasted veggies, watermelon and Italian bread with special olive oil and balsamic vinegar.
We bought the oil and vinegar at this awesome little shop in Melbourne, Fla. called From Olives and Grapes. It is a shop full of different types of olive oils and balsamic vinegars (It’s so fun to walk around and taste test the different types!). We actually bought the bottles a few months ago, but hadn’t opened them.
It was the perfect light summer dinner.
